Lettuce Play With Our Food

 

Risotto Lettuce Wraps
 


Were you ever told not to play with your food? Well, I give you permission to play with your food. I don’t mean sling your Chicken Pasta Parmesan across the room, or finger paint with 70 Plus pudding. No, I’m talking about playing around with HMR Shakes and Entrees to create fun, new recipes that you can really get excited about!

 

Take Asian cuisine, for example. I had a craving for it one day – like an itch I just had to scratch. On this particular day, I had PF Chang’s Lettuce Wraps on my mind. They’re a combination of crunchy water chestnuts and iceberg lettuce and a savory mix of mushrooms, onions, peppers and that magic marinade that brings it all together for one amazingly unforgettable meal.

For my HMR version, I used the Mushroom Risotto Entrée. My Risotto Peanut Lettuce Wraps were so close to the real deal, I had to share them. As we often do in HMR’s Corporate Office, I held a food demonstration in the kitchen and made a big batch of wraps. It’s an understatement to say they were a hit. Everyone commented on how flavorful they were. Try it for yourself:
 

 

Risotto Peanut Lettuce Wraps

1 HMR Mushroom Risotto Entrée
4 leaves iceberg lettuce
1 cup mixed red & green peppers & onions, diced
½ cup diced water chestnuts
1 tbsp low-sodium soy sauce
1 tbsp PB2 powder

Saute veggies until tender. Add entrée and water chestnuts to veggies and cook until warm. Stir in soy sauce and PB2. Spoon into iceberg lettuce leaves and roll.

At work we had a wrap contest to wrap up summer. I wanted to play along, but wanted to still stay in the box. (I'm doing Healthy Solutions.) I actually won an award for my Chili wrap that I made using lettuce as the wrapping material.

This recipe is awesome! I find it helpful to have new ways of preparing the HMR entrees with vegetables for dinner to make it more exciting and not feel like I'm eating "diet" food out of a box - it really helps me to look forward to my healthy, low-cal dinner!
