Moo Goo Gai Pan: In the Box Take-Out Food

During a recent trip to the grocery store, something caught my eye. It was the huge amount of floor space devoted to ready-to-eat take-out food. There is take-out pizza and pasta dishes, burritos and enchiladas, Chinese food of all kinds, and every type of fried seafood and chicken imaginable. There is a deli. A sushi counter. A bakery. And of course, a salad bar. The funny thing as that most everyone shopping was in this take-out section. Does anybody buy groceries in grocery stores anymore?

 

Don’t get me wrong, I totally get the appeal of ready-to-eat foods. Who wants to take the time to cook when you can grab it on the way home?

The good news is that you can make “in the box” fast food in less time than it takes to drive to the store, get your meal, stand in the check-out line, and drive home. It will probably cost less too.

We are going to make Moo Goo Gai Pan, which is a chicken and vegetable dish found in most Chinese restaurants.

Ingredients
1 HMR Savory Chicken Entree
2 cups snow peas
1 cup mushrooms, sliced
½ cup canned bamboo shoots (drained)
½ cup canned sliced water chestnuts (drained)
¼ cup fat free chicken broth
1 Tablespoon low-sodium soy sauce

Remove the chicken pieces from the entrée, dice the chicken, then set aside.

In a non-stick skillet, simmer the mushrooms in the chicken broth for 3-5 minutes. Add the water chestnuts and bamboo shoots and simmer 1 minute. Add the soy sauce and snow peas, stir well. Cover and let simmer 2-3 minutes until the snow peas are tender-crisp. Stir in the diced chicken and rice from the entree. Heat until warmed through.

I also like to add a tablespoon of PB2. Gives it some flair.
