Really Simple Soup: Garden Chicken and Rice

It seems like everyone has at least one night a week that’s really hectic. Family members coming and going within an hour of each other, everyone wants to eat before they head back out, and somehow you are the one that’s supposed to get the meal ready.

 

Wouldn’t it be great if you could put together an easy meal, using mostly canned ingredients, that could stay warm for a long time if needed, tasted great, and was low in calorie (perhaps, even in the Healthy Solutions® diet “box”)? Well, you’re in luck.

To make this happen, you need at have a few things available ahead of time:

 

1 HMR Savory Chicken Entree
2 cups non-fat low sodium chicken broth
1½ cups canned carrots (drained)
½ cup canned diced tomatoes (do not drain)
½ cup garbanzo beans (drained)
½ tsp. each: cumin, cinnamon
Salt and pepper, to taste
¼ cup diced fresh cilantro - optional, but encouraged


To make the soup:


Dice the chicken in the entree into quarter-inch pieces
Add everything (except the cilantro) to a stock pot
Simmer 15-20 minutes
Garnish with the cilantro at the last minute.


As an option, you could put everything in a slow cooker in the morning, cover, and cook on low all day. Toss in the cilantro at the last moment, and you’ve got a meal. Easy Peasy.

This recipe can easily be doubled, tripled, even quadrupled for a family. As a bonus, this soup tastes really great the next day too.

We made this recipe in a crock pot last week in the clinic & it was a hit! I normally don't like cumin & cinnamon but this was addicting!!

Strawberry Cheesecakes Shake This shake is probably already out there but just in case ... I made a delicious shake this morning that is now my favorite so far 1 cup of frozen Strawberries 1/2 cup of crushed ice 1-2 tsps of f/f s/f cheese cake flavored pudding 1 scope of Vanilla 120 shake Put it all in your blender until smooth and creamy and enjoy!
