Souper Entree!

soup

You can’t keep something this good a secret! I’m talking about one of my favorite recipes. It’s warm, savory, and has a bit of a crunch to it. I like it enough to eat it several times a week. Before I divulge the object of my obsession, I must say that the entrée in this concoction is not one I typically choose. I’m talking about the HMR Savory Chicken. We all have our favorites, and this, for me, doesn’t even make my top 5. However, I L-O-V-E it when it’s prepared like this:

Chicken with Rice and Corn Soup

1 HMR Savory Chicken Entrée
1 HMR Chicken Soup, prepared
1 cup corn
a dash of black pepper

Prepare soup, heat entrée, and warm corn. Cut up chicken into small pieces. Combine all ingredients in a bowl and dive in!

Not only do I enjoy the flavors and textures of this meal, it fits well into my busy workday. Most days I have less than 5 minutes to prepare my lunch, so I try to be efficient in the kitchen. In fact, I have a sequence in which I prepare this “souped up” entrée that gets it made in 3-4 minutes:

Step 1: Heat water in a bowl for 1 minute. During that minute open and drain a can of corn, and also take the entrée out of the box and pull back the corner.

Step 2: Take the hot water out of the microwave and put the entrée in for 1 ½ minutes. While the entree is heating, whisk soup powder into the hot water. Measure 1 cup of corn and pour it into the soup. Add a dash of pepper.

Step 3: Take entrée out of the microwave. Spoon the rice into the soup mixture, cut up chicken pieces right in the entrée tray.

Step 4: Combine chicken with the soup and stir it all together.

This meal has a sad ending though. I’m always sad when it’s gone!

What HMR recipe has a sad ending for you?

This sounds good, I'll have to try it when I get my box of soup. I used my sample packet with the Mushroom Rissoto and a spoon full of ff sour cream, it was AMAZING!

AngelFood: I'm sure broccoli would be good in it. I was surprised i liked this because it is similar to corn chowder, and I'm not a fan of corn chowder. Ozarkdi: Let me know the name of your recipe when you post it. I'm always looking for new dessert ideas.. :)
