Herbed Chicken Pasta Parmesquash

INGREDIENTS

  • 2 HMR Chicken Pasta Parmesan Entree
  • 1 Spaghetti Squash
  • 5 sprays butter substitute
  • ½ tsp. salt
  • ⅛ tsp. pepper
  • ½ tsp. garlic powder
  • 2 ½ tbsp. finely chopped basil, chives, parsley

DIRECTIONS

  1. Preheat the oven to 375 degrees F
  2. Using a sharp knife, cut the squash in half lengthwise
  3. scoop out seeds with a spoon
  4. spray each side with butter substitute
  5. sprinkle 1/2 tsp salt, 1/8 tsp pepper, 1/2 tsp garlic powder on the squash
  6. place cut side down on a baking sheet lined with tin foil
  7. bake for 45 minutes, until squash is very tender
  8. let cool
  9. Using a fork, gently pull the strands of squash away from the peel and place the squash strands into a mixing bowl
  10. Heat a skillet. Add the remaining butter substitute, spaghetti squash, herbs, salt and pepper and toss thoroughly but gently to heat and combine
  11. top with heated chicken pasta parmesan (1 entree for each half of squash)
