My Winter CSA Share

In a previous blog I waxed poetic about the benefits of having a CSA share. But did you know that a CSA share doesn’t have to just be for spring, summer or fall? Yes, there are also winter shares, and shares that go year round.

 

The share I am signed up for ends right before Thanksgiving and I’ve gotten an email letting me know about the particulars from a different farm for a winter share already. The winter share is about 45 pounds of vegetables and fruit once a month with a 2 or 3 month option. The 2011 share plans include apples, beets, broccoli, bok choy, Brussels sprouts, cabbage (green, red and Napa varieties), cauliflower, carrots, celery, celeriac, collard greens, dried beans, escarole, fennel, garlic, kale, lettuce, leeks, onions (red and yellow varieties), parsley root, parsnips, pie pumpkins, peppers (green and red), potatoes, popcorn, rutabagas, salad turnips, sweet potatoes, Swiss chard, shallots, spinach, two kinds of winter radishes and winter squash including delicata, kabocha and butternut. Talk about getting in your colors and variety! The price per pound comes to an average of $1.78 which I think is very reasonable for organic, farm fresh produce.

Now I think I eat a wide variety of fruits and vegetables, am not at all a picky eater, and I personally have yet to find a vegetable that does not go well with the HMR Entrees. I love fennel with oranges in a fresh citrus salad. I love escarole in soup. Dried beans are a staple in our household. Greens like kale, Swiss chard and collard greens are easily incorporated into soups, pastas and entrees. But I will confess that I struggle with using celeriac and rutabaga as more than just ingredients for soup. I’m looking forward to the cold winter months for roasting root vegetables and making soups with lots of vegetables. One of my favorite soup recipes is actually a vegetable soup puree, like this one.

Soup aside, does anyone have a good celeriac or rutabaga recipe to share?

What a great winter blog theme, Peggy!! II love roasting root vegetables in the oven--any type of squash, potatoes, onions etc--it takes almost no effort to cut up the veggies, add a little salt and pepper and olive oil, throw in a pan, and put in the oven for 45-60 min :) I mixed my roasted veggies left over from dinner with the Chicken with Barbecue Sauce entree for lunch yesterday and it was delicious!

I've used this website to look up CSAs in the past. There are definitely CSAs in Texas- plug in your zip code to see if any are close to you (I hope there is!). http://www.localharvest.org/csa/

Peggy, this is such a cool concept. Do you know if there are initiatives like this in the South? Particularly Texas?
